And one of my greatest passions is creating healthy meals for myself, my boys & our friends. I love to keep it simple and keep it REAL. I love using fresh produce that is easy to get and adding a twist to it. So let our culinary journey begin.....
Jen's Raw Pad Thai salad:
****Please note ingredients subject to change depending on what's in the villa:)
Chinese cabbage...Pear
Mango
Zucchini
Carrot
Purple cabbage
Spring onions
Coriander(Cilantro)
Red & orange capsicum(bell peppers)
Fresh hot chilli pepper-optional of course;)
Sunflower seeds- oven toasted no oil
Satay paste:
2-3 tablespoons Organic peanut butter/ or almond paste
1-2 tablespoons Organic MSG-free soy sauce
Agave syrup to taste
lemon or lime juice.
1 garlic clove minced
I added a little black sesame paste.
***Play with the amounts of each ingredient..I'm still changing it up so when I feel I've mastered the amounts for this sauce I'll post:)
( You can add cooked prawns/squid if you feel the need)
